• 1½ cups (190 g) all-purpose flour
• 1½ tsp baking powder
• ¼ tsp salt
• ½ cup (113 g) unsalted butter, softened

• 2 large eggs

• ⅓ cup (80 ml) whole milk
• 1 tsp vanilla extract
• A few drops of pink gel food coloring (optional)
• Frosting: 4 oz (113 g) cream cheese and ¼ cup (57 g) unsalted butter, both softened
• Frosting: 2 cups (240 g) powdered sugar and 3 tbsp strawberry jam

Instructions

1. Heat the oven to 350°F (175°C). Grease a heart-shaped mini cake pan, or a 9×9-inch pan if you’ll cut the hearts out after baking.
2. Whisk the flour, baking powder and salt.
3. Beat the butter and sugar until light and fluffy, about 3 minutes. Beat in the eggs one at a time, then the jam, vanilla and food coloring.
4. Mix in the dry ingredients in two parts, alternating with the milk, until just combined.
5. Bake for 18–22 minutes for mini hearts, or 25–30 minutes for a 9×9-inch pan, until a toothpick comes out clean. Let the cakes cool completely, and cut out hearts if you used a square pan.
6. Beat the cream cheese and butter until smooth, then beat in the powdered sugar and jam. Swirl a thick layer onto each heart.
