- Frosting: 3–4 tbsp milk, 1 tsp almond extract and a little pink gel food coloring
Instructions
- Heat the oven to 350°F (175°C) and line two baking sheets with parchment.
- Beat the butter and sugar until light and fluffy, about 3 minutes. Beat in the eggs, almond extract and vanilla.
- Mix in the flour, cornstarch, baking powder, baking soda and salt until just combined.
- Scoop large balls of dough, about ⅓ cup each, and flatten them into thick discs about ½ inch tall.
- Bake for 8–10 minutes, until set but still pale. Don’t overbake. Let the cookies cool completely.
- Beat the butter until creamy, then beat in the powdered sugar, milk, almond extract and coloring until smooth. Swoop a thick layer onto each cookie and chill for 30 minutes.
