How to Store It

  • Keep it in the fridge in an airtight container, since the mousse needs to stay cold. Eat it within 2–3 days.
  • Crumbl serves it chilled, so don’t reheat it. The mousse would melt.
  • Freezing isn’t a good idea, because the mousse loses its texture when it thaws.

Crumbl Frozen Hot Chocolate Cookie Recipe (Copycat)

Crumbl doesn’t share its recipe, but this version makes big chocolate cookies with hot cocoa mousse and marshmallows, close to the original. It makes about 9 large cookies.

Ingredients

  • ½ cup (113 g) unsalted butter, softened
  • ¾ cup (150 g) light brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1¼ cups (160 g) all-purpose flour
  • ½ cup (45 g) unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup (85 g) semi-sweet chocolate chips
  • Mousse: 1 cup (240 ml) cold heavy cream and 4 oz (113 g) cream cheese, softened
  • Mousse: ⅓ cup (40 g) powdered sugar and ¼ cup (25 g) hot cocoa mix
  • Topping: about 1 cup mini marshmallows

Instructions

  1. Heat the oven to 350°F (175°C) and line two baking sheets with parchment.
  2. Beat the butter and both sugars until light and fluffy, about 3 minutes. Beat in the egg and vanilla.
  3. Mix in the flour, cocoa, baking soda and salt until just combined, then fold in the chocolate chips.
  4. Scoop large balls of dough, about ⅓ cup each, and space them well apart. Flatten each ball slightly.
  5. Bake for 9–11 minutes, until the edges are set and the centers still look soft. Let the cookies cool completely.
  6. Beat the cream cheese, powdered sugar and cocoa mix until smooth, then whip in the cream until stiff peaks form.
  7. Spread a thick layer of mousse on each cookie, top with mini marshmallows and chill for at least 1 hour.

Tip: Crumbl serves this cookie chilled, so keep it in the fridge until you’re ready to eat it.
