- ½ cup (113 g) unsalted butter, softened
- ¾ cup (190 g) creamy peanut butter
- 1 cup (200 g) light brown sugar
- ¼ cup (50 g) granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2¼ cups (280 g) all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1½ cups chopped peanut butter cups (about 15 regular-size cups)
- For the drizzle: ½ cup (85 g) milk chocolate chips and ¼ cup (65 g) creamy peanut butter
Instructions
- Heat the oven to 350°F (175°C) and line two baking sheets with parchment.
- Beat the butter, peanut butter and both sugars until creamy, about 2 minutes. Beat in the eggs and vanilla.
- Mix in the flour, baking soda and salt until just combined, then fold in the chopped peanut butter cups.
- Scoop large balls of dough, about ⅓ cup each, and space them well apart. Flatten each ball slightly.
- Bake for 10–12 minutes, until the edges are set and the centers still look soft. Let the cookies cool on the pan for 5 minutes.
- Melt the milk chocolate and the peanut butter in separate bowls, 20–30 seconds each in the microwave, then drizzle both over the warm cookies.
