How to Store and Rewarm It

  • It’s best eaten right away, while the cookie is warm and the mousse is cold.
  • Keep leftovers covered in the fridge and eat them within 2 days, since the mousse topping needs to stay cold.
  • To rewarm, scoop off the mousse first, microwave the cookie for 10–15 seconds, then add the mousse back on top.
  • Freezing isn’t a good idea, because the mousse loses its texture when it thaws.
