Crumbl Pumpkin Cheesecake Cookie Recipe (Copycat)

Crumbl doesn’t share its recipe, but this version makes big graham cookies with pumpkin cheesecake frosting, close to the original. It makes about 10 large cookies.

Ingredients

  • ¾ cup (170 g) unsalted butter, softened
  • ¾ cup (150 g) light brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1¾ cups (220 g) all-purpose flour
  • 1 cup (100 g) graham cracker crumbs
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • Frosting: 6 oz (170 g) cream cheese and ¼ cup (57 g) unsalted butter, both softened
  • Frosting: ⅓ cup (80 g) pumpkin purée, 2½ cups (300 g) powdered sugar and 1 tsp pumpkin pie spice
  • Streusel: ½ cup (50 g) graham cracker crumbs, 2 tbsp brown sugar and 2 tbsp melted butter

Instructions

  1. Heat the oven to 350°F (175°C) and line two baking sheets with parchment.
  2. Beat the butter and both sugars until light and fluffy, about 3 minutes. Beat in the egg and vanilla.
  3. Mix in the flour, graham crumbs, baking soda, salt and cinnamon until just combined.
  4. Scoop large balls of dough, about ⅓ cup each, and space them well apart. Flatten each ball slightly.
  5. Bake for 10–12 minutes, until the edges are golden and the centers still look soft. Let the cookies cool completely.
  6. Mix the streusel ingredients, spread them on a lined pan and bake for 6–8 minutes until toasted. Let it cool, then crumble it.
  7. Beat the cream cheese and butter until smooth, then beat in the pumpkin, powdered sugar and spice. Spread a thick layer on each cookie, top with streusel and chill for at least 1 hour.

Tip: Crumbl serves this cookie chilled, so keep it in the fridge until you’re ready to eat it.
