- Cake: 1 cup (125 g) all-purpose flour, ⅓ cup (30 g) dark cocoa powder, 1½ tsp baking powder and ¼ tsp salt
- Cake: 5 large eggs, separated
- Cake: 1 cup (200 g) granulated sugar, divided
- Cake: ⅓ cup (80 ml) whole milk and 1 tsp vanilla extract
- Tres leches sauce: 1 can (12 oz) evaporated milk, 1 can (14 oz) sweetened condensed milk and ½ cup (120 ml) heavy cream
- Topping: 1½ cups (360 ml) cold heavy cream whipped with 3 tbsp powdered sugar
- Streusel: 8 chocolate sandwich cookies, crushed, mixed with 1 tbsp melted butter
Instructions
- Heat the oven to 350°F (175°C) and grease a 9×13-inch pan.
- Whisk the flour, cocoa, baking powder and salt.
- Beat the egg yolks with ¾ cup of the sugar until pale, then mix in the milk and vanilla. Fold in the dry ingredients.
- Beat the egg whites to soft peaks, add the remaining ¼ cup sugar and beat to stiff peaks. Gently fold them into the batter.
- Spread the batter in the pan and bake for 22–26 minutes, until a toothpick comes out clean. Cool for 15 minutes.
- Whisk the three milks together. Poke holes all over the cake and slowly pour the milk over it. Chill for at least 4 hours, or overnight.
- Spread the whipped cream on top and sprinkle with the cookie streusel just before serving.
Tip: Like Crumbl’s, it’s best served cold, straight from the fridge.
